Good Evening Cysters and Friends,
So a few weeks ago I had an intense burger craving (burgers are one of my favorite foods), however, with my fitness goals and PCOS management, I couldn’t just overly indulge due to the carb rush it would cause. After contemplating, I decided to google a recipe on stuffed burgers and prepare them using portabella mushroom caps. I must say, it was so delicious and filling, and it will probably be a regular meal in my kitchen for many years to come. Check out the recipe below:
- 1 pound ground turkey
- 1/4 cup sharp cheddar, muenster, and pepperjack cheese diced small (I like to stuff mine with varieties of cheese)
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- Olive oil spray
- 1/4 cup caramelized onions
- 4 romaine leaves, halved
- Sliced tomato
For The Portabella caps (8 caps)
- 1/2 clove garlic, minced
- 2 teaspoons of sea salt
- 2 teaspoons of ground black pepper
- Olive oil
- basting brush
Sprinkle each portabella cap with salt, pepper, minced garlic, and bast with olive oil. Bake in the oven on 400 degrees for 10 minutes or until desired firmness is reached. Voila!!! So Simple!
PREPARATION
Burgers and Assembly
In a large bowl, combine the ground turkey, cheese, Worcestershire, salt, and pepper. Mix together with your hands until just combined—you don’t want tough burgers.
- Divide the meat mixture into four portions and roll each into a ball. Place each ball on a large plate and squish it down into a flat patty. Press your thumb into the center to create a little well. This will help the burgers keep their flat shape.
- Spray the grill with olive oil and heat it to medium heat. Grill the patties on direct heat for 5 minutes, covered and undisturbed. Flip once, cover, and grill for another 4 to 6 minutes, until cooked through.
- To assemble the burgers, smear the caramelized onions on the bottom half of one of the portabella buns. Top with romaine lettuce, tomato, and place a cooked patty on each. Tpp with remaining portabella and dinner is served.
